I tried this last Christmas & the 72% dark chocolate was too bitter & not many like this dessert BUT this Christmas Day I’m gonna give it a go again but with maybe 50% dark chocolate or maybe half 50% dark & half milk chocolate & instead of cherries I’m going to use Boysenberries. I made this for an annual dessert competition, it won! It was delicious however I agree with the other comments that the size wasn’t as expected ( it was smaller than I thought it would be) and the crème fraiche was not easy to deal with. I will make again as it tasted amazing!

Tweaked it and it was yum. Used almond fingers instead of chocolate sponge to avoid chocolate overload and folded whipped cream into the creme fraiche mix as felt it was too heavy when made as per the recipe. Also used 2/3 dark ghana and 1/3 creamy milk.

Worst trifle ever!! The chocolate and crème fraiche did not go smooth and creamy, it just went super thick. Made this a day in advance and the chocolate splodges were so hard they almost needed slicing! Also, the trifle dish in the picture must be tiny as my 20cm dish was only half full. Won’t bother with this again.

It tastes great but a lot of modifications needed particularly if you aim to make the size shown in the photo, used 500gm choc sponge and needed half the juice from another jar to soak the extra sponge. Had to add cream to the fraiche mix as it was too gluggy and wouldn’t spread nicely over the sponge. It broke up when served too. Wouldn’t make it again.
