    Made this so many times already! A recipe that sounds simple but is just incredible with the Blondie chocolate and the contrast of the crispy wine biscuits and the chewy apricot. So good. Hot tip - use a tall glass like a rolling pin to flatten the base so it's totally even. Heat the chocolate in the microwave 10-20s at a time then stir.

    This is totally delish! I crushed the biscuits to a fine crumb which made it very fudgy. Next time I'd do half of them in the processor and half by hand to get a bit more crunch.
