Ingredients: 60g unsalted butter; 300ml milk; Finely grated zest of 1 medium orange; 520g high grade flour; 35g cocoa; 2 ¼ teaspoons instant yeast; ½ cup white castor sugar; 2 teaspoons ground cinnamon; ½ teaspoon allspice; 1 large egg, lightly beaten; 2x 100g blocks of Whittaker’s Fijian Ginger and Mandarin Chocolate, chopped into rough small pieces; Vegetable oil (for brushing the bowl); ¼ cup castor sugar; 3 tablespoons boiling water; ½ cup flour; 1 tablespoon cocoa; Approximately ½ cup cold water
