Highly recommend chilling or freezing the cake before cutting it in half. It domed a lot in the oven, so I had to trim it to fix the dome and cut the overcooked pieces off.
Mascarpone is sold in 500g pouches in NZ so I substituted 100g sour cream (50g in each icing), and 2 extra tablespoons of icing sugar to the espresso icing. Both icings are delicious, especially together, you could put them on any cake and it would taste amazing. The icings make the recipe great the cake is good but not the best.
